If i carved out and painted a practically identical wooden version of a painting and sold it, would that be copyright infringement?

Generally yes. It’s still a copy of a protected piece of art, and any reproduction method would still be breaking the copyright.

Interestingly, if you carved the scene and did not paint it, you could probably justify it as a new work, but duplicating the paint job of the painting would probably fall under the copyright law.
