What Sort Of Legal Issues Can Arise From Using Someones Intellectual Property In A Book?

I am currently writing a non-fiction book, and some of my information will be from a survey I am asking volunteers to fill out. What sort of legal issues can arise from using someones intellectual property in a book? What sort of things can I do to make sure they dont demand payment etc, even though they all know 100% that the information is to be used in a book?

They “volunteered” & were informed of it’s use therefore the information becomes ur property
